The League of Breakfast Heroes

Smoky baked beans. Sauteed mushrooms with balsamic vinegar. Parmesan roasted potatoes. Perfectly cooked scrambled eggs with chives. Farmer's sausage. These are what I call, the league of breakfast heroes. They provide enough nutrients to start off a great day and what's more, they taste great. These heroes will also make you smile and less senile, like the people you will see below.

Crisp Skin Garlic and Thyme-Roasted Chicken Parts with Mustard Croutons

Oh how very tiring times have been for me. Fortunately, it is all going to change momentarily - my exams are over and my assignment is complete, I get to have a little breather. :) There was a mini celebration last night with cheap but surprisingly good bottles of wine with some friends.

Basic Mayonnaise

Mayonnaise
2 egg yolks
250ml light olive oil
1 tsp dijon mustard
sea salt and black pepper

- Beat 2 yolks, mustard and seasoning with a whisk or an electric beater in a mixing bowl. Gradually add oil, a little drizzle at a time, while beating, until mixture emulsifies and produces a thick creamy texture as shown below.

- If your mayonnaise is a little too thick, add a few tsp of hot water to smooth it out.

Crispy Oven Baked Fries

Oh what a week. It has been exams after exams and another exam to happen in a few days time. I apologize for the long wait for the post and for the short entry you will soon realize. I made these fries on Sunday and boy were they good. Pity there isn't duck fat lying anywhere near my fridge or I will pop a bottle of champagne to go with these.
