Chicken Parmesan Bake


I apologize for the lack in posts recently. Lately, I tested a recipe for a promising chicken salad sandwich but it tasted too bland for it to be posted here(LOL), not to mention that the buns are rock tough. Nonetheless, you will find a picture of it below. I just wanted to add the picture on so I won't spend 15 minutes of my time taking that picture for nothing. Andrik on the other hand has been busy baking a lot of cakes and nice desserts but is too held up at the moment with many errands and is temporarily unable to post or update.


We have a new friend that might be joining and posting with us. She is my classmate and is exceptional at trying out new recipes and making delicious food but is currently having trouble figuring the mechanics of this blog. More details to come.

As the title suggests, this recipe comes from the very popular food wishes website you can view here. I was seduced into making this recipe from the video you will see later - that looks incredibly easy and delicious to make. I substituted the packaged croutons for croutons made from Ciabatta bread. It turned out fantastic. Thank you Chef John for the recipe.

2 tbsp olive oil
2 cloves garlic, crushed or finely chopped
hot red pepper flakes, to taste
6 boneless skinless chicken breasts (I used 5, but they were huge!)
2 cups marinara sauce
1/4 cup chopped basil
8 oz fresh mozzarella, torn into pieces
4 oz Parmesan, grated
2 cups garlic croutons


- Substitute shredded mozzarella for fresh mozzarella.
- Substitute marinara for basic marinara recipe.
- Substitute garlic croutons for freshly made recipe below.

Garlic Croutons

5 1inch slices of ciabatta, medium diced
olive oil, as needed
2 tsp garlic powder
sea salt, to taste

- Preheat oven 175C/350F.

- Lay bread dices on a baking tray and sprinkle garlic powder, salt and olive oil. Toss to mix.

- Bake for 10 mins. Use as desired.
