The League of Breakfast Heroes


Smoky baked beans. Sauteed mushrooms with balsamic vinegar. Parmesan roasted potatoes. Perfectly cooked scrambled eggs with chives. Farmer's sausage. These are what I call, the league of breakfast heroes. They provide enough nutrients to start off a great day and what's more, they taste great. These heroes will also make you smile and less senile, like the people you will see below.

I enjoyed this breakfast thoroughly, I thought it was brilliant and I thanked myself for the food. I foresee myself making this again and again. Especially the mushrooms, the beans, the eggs, the sausag.. oh, they were all especially good. It takes a bit of time to prepare 5 individual items, about a good hour, it's worth it really.

Honestly, I was a bit reluctant to show the recipe entirely, but I felt a tad bit weird not doing that, because I like to share. :)

Smoky Baked Beans
Sauteed Mushrooms with Balsamic Vinegar
Roasted Parmesan Potatoes
Scrambled Eggs with Chives
Grilled Farmer's Sausage, or any other gourmet sausage, grilled.

Smoky Baked Beans

2 cans of english recipe baked beans
100g bacon, sliced thinly
1 tsp smoked paprika
1 onion, finely diced
1 tbsp brown sugar
1 tsp Dijon Mustard
sea salt
black pepper

- Get a skillet on medium heat, add bacon and render fat. Add onions and saute with bacon until transparent. Drain grease. Add baked beans, onion and sugar. Bring to boil, stirring occasionally. Simmer for 15 mins. Turn off heat.

- Add mustard. Stir. Season to taste. Serve warm.

Sauteed Mushrooms with Balsamic Vinegar

400g champignon/cremini/button mushrooms
2 cloves of garlic, minced
pinch of dried oregano
2 tbsp balsamic vinegar
sea salt
black pepper
extra virgin olive oil, as needed

- On low heat, saute garlic with olive oil. Add oregano and further saute until garlic turns fragrant but not brown.

- Turn up heat to medium. Add mushrooms saute for 2-3mins.

- Add balsamic vinegar and season.

- Saute until mushrooms are cooked through. Season to taste. Serve warm.

Roasted Parmesan Potatoes
from chicho's kitchen

4 medium red potatoes
2 tbsp olive oil
1/3 cup Parmesan cheese, grated
1 tsp garlic powder
1 tsp paprika
salt and pepper to taste

- Preheat the oven to 400ºF (200ºC). Cut the potatoes in wedges.

- In a small bowl, combine the Parmesan, garlic, and paprika and set aside. Next, toss the potatoes and oil together in a mixing bowl then add the bowl of cheese and seasonings and stir to coat.

- Arrange them on a cookie sheet in a single layer.

- Bake for about 30-35 minutes then remove from oven and turn over all the potatoes. Bake for another few minutes until crispy and golden.

Scrambled Eggs with Chives

8 eggs
2 tbsp unsalted butter
2 tbsp finely chopped chives
sea salt
black pepper

- In a large saucepan, crack in eggs and butter.

- Bring saucepan on medium heat, stirring egg mixture occasionally.

- When the eggs begin to cook, continue stirring occasionally to break its form into pieces while ensuring the eggs are still wet.

- When eggs are almost done but still watery, remove pan from heat and continue stirring. Season and add chives. Pour eggs into a separate bowl immediately. Serve straight away.
