Pita Bread Pizza with Fresh Mozzarella
The best thing about this pizza is that it is dough-less, very easy to make and spectacularly delicious. The fresh cheese melts perfectly and is beautiful to the taste, the tomatoes add a tad of sweetish tartness, briny olives that makes sense and a hint of garlic and extra virgin olive oil to sum everything up. Andrik calls it "sex on a plate".
However, it can cost quite a bit, depending on where you get your produce, unless you happen to have your own cow and farm.
4 pita breads, lightly toasted(5 mins in a 200C oven)
2 balls of fresh mozzarella, sliced into discs
50g pitted olives, sliced
50g semi-dried tomatoes, sliced into strips
2 cloves of garlic, minced
2 tbsp parmesan, grated
1/4 cup extra virgin olive oil
parsley, to garnish
sea salt and black pepper
- Preheat oven 220C.
- Smear each pita bread with minced garlic and olive oil. Season the pita breads with a pinch of salt and pepper.
- Split sliced mozzarella among 4 pita breads, then top with olives and semi-dried tomatoes.
- Bake in the oven for 5-7 mins or until the cheese has melted and pita bread crisps up.
- Serve hot with chopped parsley.
