
Apple + Cinnamon + Muffin. 3 winning items in a row is pretty self-explanatory but the sweet crunchy cinnamon-smelling topping went over the top and up the ante. I love the way the cinnamon smell permeates the house and salivated the love of my life. Just a few days ago I got into a relationship with the most genuine, big-hearted, happy girl I've met and like the apple cinnamon muffin, she brings me joy(and fats, lots of it) and i hope all of you enjoy these as much as I did.

I usually warm them up in the microwave but like other people i have skeletons in the closet, after putting them in the microwave i like to put them in the oven for a short while just so that the smell permeates the kitchen (again). Yes what a sick fetish.




The topping is supposed to be coarse crumbs but like other messups i once again managed to make it moist but it still turned out delicious.


Apple Cinnamon Muffins

makes about 12 muffins
Dry ingredients
2 cups all-purpose flour
1 cup sugar
3 tsp baking powder
1/2 tsp baking soda
1 1/4 tsp ground cinnamon
1/2 tsp salt
Wet ingredients
2 eggs
1 cup sour cream
1/4 stick (57 g) unsalted butter, melted
1 1/2 cup tart apples, peeled and chopped
Topping
1/4 cup sugar
3 tbsp all-purpose flour
1/4 tsp ground cinnamon
2 tbsp (28g) cold unsalted butter
Preheat oven to 204 degree celcius / 400 degree F.
In a large bowl, stir together dry ingredients. In another bowl, beat eggs, sour cream and melted butter. Stir into dry ingredients just until moistened. Fold in apples.
Spray paper muffin cups with nonstick cooking spray and fill cups to the top or just grease muffin pan and pour the batter in (like what i did).
For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin.
Bake for 20-23 mins or until a tester inserted into center comes out clean. Cool for 5 mins before removing from pan to cool the rest of the way.
To store: place in airtight container at room temperature or in the fridge if preferred cold. Warm up in microwave for 10-25 seconds if preferred warm.
