
One of my favorite things to have with rice is kimchi. The thought of eating kimchi with rice would make me salivate and become hungry again. Luckily, I just had my fix - a very good kimchi soup with a hot piping bowl of rice.
I had leftover smoked sausage sitting at the bottom of my fridge. I needed some protein so I chopped it up and dumped it into the soup. It was an ingenious idea. The smokiness went awesome with the sweet, hot and tart flavors of the kimchi, it brought me straight to kimchi heaven.
The next best part about this soup dish is that it is incredibly easy to cook. Step one, you dump everything into a saucepan. Step two you bring it to a boil and wait. Step three you eat. Simple and really good.
Recipe
serves 2
1 cup kimchi, chopped
1 medium smoked sausage, lean variety
1/2 block of firm tofu, diced
1 tbsp Korean bean paste or gochujang
1 tbsp red pepper flakes
1/2 white onion, sliced
2 sprigs of scallion, chopped
2 cups water
- Put all ingredients in a saucepan. Add the water last.

- Bring to a simmer. Turn heat to med-low.

- Simmer for 15-20 mins. Serve with hot rice.
