
Originally a Thai recipe, shrimp toasts are supposedly deep fried, but I'm not in the mood to deep fry(have to clean up) so I baked it instead. Truth to be told, I prefer them deep fried because they'll go well with beer. Don't get me wrong, these are great too, especially when you are counting your calories.
Recipe
serves 4 as appetizers
4 slices of sandwich bread, lightly toasted
1 egg, beaten
200g medium shrimps, peeled and minced
2 cloves of garlic, skinned and minced
2 tsp olive oil
1 tbsp cilantro, finely chopped
1 tbsp scallions, finely chopped
2 tsp fish sauce
1/2 tsp white pepper
1 tsp sesame oil
1 tbsp sesame seeds, toasted
thai sweet chili sauce, comes in a bottle - available at most supermarkets
- Preheat oven 200C.
- Mix shrimps, cilantro, scallions, sesame oil, fish sauce, garlic, pepper and egg in a bowl.

- Spoon shrimp mixture on toasts and spread evenly. Drizzle top with olive oil.

- Bake in oven for 10-15 mins. Sprinkle with sesame seeds.
- Slice toasts into 4 equal squares and serve immediately with thai chili sauce.
how would you make the deep fried version
ReplyDeleteInstead of baking them, cut them into 4 equal quarters first. Then get a wok on medium heat, add some peanut oil about 1/4 cup or so, get the oil hot and fry the quarters shrimp side down for about 2 mins a side until nice and golden brown. Scoop the fried pieces with a slotted spoon and set it on kitchen towels until ready to serve. Hope this helps :)
